I have recently been getting emails purportedly from iPhone, Royal Mail, Sainsbury, Morrisons, Shark Tank etc... etc....

I followed the usual reporting route through SpamCop and since I reported the first one, I have been inundated with this junk. Not just one or two a day, but up to 15 per day which, as you can imagine can take a long time to report each time when you only flash up Outlook Express once a day..

The last one I reported today is https://www.spamcop.net/sc?id=z6704562724z6e01746bb5c7f801fcc9b8665297c7eaz

Reporting to abuse@microsoft.com or report_spam@hotmail.com, where it originates, seems obviously not to work but just to multiply the amount of spam that returns. All the spam has a common thread in the "reply to" field which contains in various different forms deutsche.xyz with or without extra characters. All of them have in common, https://optimized-by.rubiconproject.com plus the rest of an address. Is there a way of stopping this amount of spam or do we keep reporting through SpamCop?

I suspect your reports are working (tried a link and came up dead) Appears you are/maybe being spammed by a "hosting site"

My dot-xyz spam has lasted a few months and now it has dropped.  It could be list washing.  Probably more like petzl said it could be working and the administrators turning off the sites.  It is interesting that for me, yesterday the links changed to dot-im.

I did notice that many, if not all of these spam emails contained "amazonaws" in amongst them.  I decided to forward each one I received on one particular day to 'abuse@amazonaws.com'.

As if by magic, I haven't had one since. Maybe it was a coincidence, maybe list washing, or maybe I found the right place to complain. Who knows.

In my opinion, the case you are describing in this post definitely looks like list washing.
